As a starting point for mathematicians, I recommend the book by Folland, Quantum Field Theory: A Tourist Guide for Mathematicians. The final part deals mainly with the canonical formalism and the behaviour of a charged particle in an electromagnetic field, including the quantization of the field and the emergence of photons.
